Lunch

Risotto is a lot of work, particularly for a light lunch on a weekday. But holy gosh, is it ever worth it. And cheap, too. When cash is available, stock the pantry with onions and garlic, arborio rice, parmigiano cheese and chicken stock in those neat UHT containers, and you’ve got risotto whenever you want it. Yum.
